I can remember watching this in college when it first came out. I'd get up early on Saturday morning and go stake my claim to the TV room in the dorm (not that anybody else cared because most of them were just going to bed

). I enjoyed the series at the time, but the only story that I clearly remember after almost 40 years is "Yesteryear" where Spock uses the Guardian of Forever to go back to help his younger self. Loved it! I do have several of Alan Dean Foster's novelized episodes, so I suppose I could read through them to see if they jog my memory. As I recall, the animation was about what you'd expect for Saturday morning cartoons, no better but certainly no worse, either. I recall there being a few junior officers of other species that were cheaper to do with animation than on the live series. One was a big cat-like person, I believe. Was there also an Andorian? I could have sworn there was also a Horta - not as a major character, but just around, which I thought was cool. I agree that it still had the feel of the original series, despite being a cartoon, with voice talent from TOS as well, which I think helped. If you haven't seen it before, and it's available free on the Internet or as part of whatever subscription service you use, then check it out.
